NV Filipa Pato 3B Metodo Tradicional Rosé
Filipa's best loved wine, a bright bouquet of berries and bubbles, the 3B rosé sparkler, our favorite holiday toasting libation, is a joy to behold. The grapes here, the red baga and white bical, are both native to Bairrada. As with last month's wine, all farming is done organically and biodynamically, and all cellar work done in the natural, hands-off style.

Vinification is by 'metodo tradicional', aka méthode champenoise, with the second fermentation occurring in the bottle. There is no dosage (and less than 2g of sugar in the final wine), and it spends 9 months aging on the lees in the bottle before disgorgement.

This wine is ridiculously festive—bright red, high carbonation, fine bubbles, a beautiful red-flower bouquet and strawberry aroma and a dry finish. For toasting, this bottle is endlessly fun; for cheese and crackers, a perfect pairing; for fruity and chocolate desserts, divine. Cheers!
